About this winery

The Lavau family and its love of wine, its passion for the land and the soil began in Saint Emilion in the 19th century. Product notes

SERVING AND PAIRING: 17-18°C to allow its full complexity to express itself. Decanting is not necessary, as it expresses itself as soon as it is opened and poured into the glass. Ideal with a rib of beef or a maître d'hôtel entrecôte.

Production notes

The grapes are 100% destemmed and placed in temperature-controlled stainless steel vats to macerate for around 24 days with two punch-downs at the start of fermentation, followed by two pump-overs per day. 60% of the cuvée is aged in vats, and 40% in 450L barrels of 1 and 2 wines, for a period of 12 months, before being blended with the vat portion.

Tasting notes

A nose of great finesse, blending notes of red fruit, fig, and sweet spices. The palate is very elegant, with a lovely structure of red fruit and very refined tannins.
