Production notes
The name “Tuvilains” is far back in our history. There’s a long time ago, the farmers were “vilains” (ugly), and the ground was hard to work, hence the name “Tuvilains”. Soil type: Clay and limestone, the soil is deep, hence the name “Tuvilains” Age of the vineyard: 45 years Grape variety: 100% pinot noir Mode of action: Reasonable and reasoned farming. HVE3 certified. Yield: 45hl/ha Winemaking: The grapes are harvested by hand, in box of 15kg. Once at the winery, they are sorted and de-stemmed at 100%. The grapes are putted in vat during 25-30 days for the alcoholic fermentation. Then, the new wine stay in oak barrel (70% new) during 12 month. We don’t make any fining or filtration. Tasting note: Generous, with a great power aromatic and a fleshy texture. This wine can go with meat a little farm, like game, type hare, or strong cheese. Temperature of service: 15-16°C
