The Domaine de la Cotelleraie is located in the heart of the vineyard of St Nicolas de Bourgueil. Gérald Vallée manages the estate and strives to bring out the character of the terroir and the typicality of the Cabernet Franc from his vines.

Product notes

In a classic way, the Le Vau Jaumier vintage is aged in 1 wine barrel for 18 months. The bottling is done without fining or filtration. Saint Nicolas de Bourgueil has a dark and brilliant ruby color. Its aromas of very ripe red fruits, almost candied, the tannins of the grape and the oak barrel reveal a complex, powerful wine with a vanilla and spicy finish.

Production notes

The grapes are harvested by hand and then sorted grain by grain at optimum maturity. "Le Vau Jaumier" is the last terroir to be harvested on the estate. After crushing and destemming the grapes, the alcoholic fermentation starts naturally and is conducted in thermo-regulated wooden vats. The cap is punched down twice a day for about ten days and the maceration is then prolonged for 15 to 20 days to perfect the extraction. Entonnage, in barrels after devatting and pressing. The malolactic fermentation is then done in oak barrels (during the spring following the harvest).
