Production notes

Elaboration in stainless steel tanks of 6,000 liters to extract the best quality of the grapes, the color and the aromas. Contact with the skins for 2 to 3 weeks with temperature control. The alcoholic fermentation is spontaneous with a light pumping over for 5 weeks. When the alcoholic fermentation is finished, we press the wine and send it directly to the French oak barrels of third use, where the malolactic process takes place, also in a natural and spontaneous way.

Tasting notes

Intense, clean nose with a strong presence of fruit scents (plum, strawberry, black cherry, black currant). Also we white pepper scents. Elegant, crisp mouthfeel with notes of rosemary and cedar that emerge as the emerging as the wine evolves - not to mention the soft, yet dynamic tannins that promise a great future for this a great future for this wine. Encore davantage nature et sauvage dans ce millésime, mais toujours aussi délicieux à boire! Il affiche une jolie robe rubis légèrement claire et subtilement violacée. On est intrigué après l'avoir humé par ses notes quelque peu animales (fourrure), entremêlées de parfums fruités (fraise, mûre, cerise noire, etc.), avec une pincée de fines herbes séchées. Exprimant une substantielle fraîcheur en bouche, ce vin paraît léger en bouche découlant probablement de son élevage partiel en amphores. Excellente longueur en finale! S'il est au départ un peu déroutant, on y prend goût rapidement. Ultra polyvalent à table, il conviendra avec à peu près tout ce qui s'accommode du vin rouge, de la volaille grillée jusqu'au bœuf. Servir assez frais.
