About this winery
In 1895, two winegrowers in Pommard created the Maison Moingeon in Burgundy. The House has been rigorously elaborating Crémants for more than a century with a traditional vinification method: the alcoholic fermentation is carried out in stainless steel vats thermo-regulated at 18°C.

Depending on the vintage, the bottle ageing process follows the "tirage", the operation at the very basis of the Champagne technique, which consists in adding to the base wine a solution containing sugar and yeast. This association will provoke by biochemistry a second alcoholic fermentation in the bottle. This last operation will last between 10 and 20 months. The last step, called "disgorging", consists of expelling the now inactive yeasts contained in the bottles under the effect of the internal pressure, thus of the carbon dioxide gas naturally obtained by the alcoholic fermentation (CO2). To make up for the loss of liquid volume caused by disgorging, we add a liqueur d'expédition (dosage - base wine with or without sugars) which will have a greater or lesser amount of sugar, depending on the style sought, or even none at all for non-dosed vintages.
Tasting notes
Crémant de Bourgogne is by definition a festive wine! The elegance of Burgundy wines is supported by the freshness of the effervescence, which translates into an explosive pleasure in the mouth where you will find crisp aromas of fresh pear, stone almond and pineapple. It also has a vibrant vibrancy that enlivens the taste buds while being harmoniously balanced by an enveloping texture. The finish leaves a clean, flowing mouthfeel with a well-fruited, creamy aromatic return.
