About this winery

Winegrowers from father to son since 1577, the two sons work on the 40ha estate located in Saint Bris Le Vineux. Very well exposed, the vines are located on different stony and sloping clay-limestone slopes mainly in Saint Bris le Vineux, cote d'Auxerre, Chablis. The various works of vineyards as well as the care of the wines are carried out in family. The SORIN-DEFRANCE estate only markets its production.

Product notes

The vines are mulched (covered with a carpet of plants more or less thick, more or less sophisticated) entirely to avoid the flow of soil, water evaporation, weeds ... Vinification in stainless steel tanks with temperature control. Maturation in stainless steel tanks as well. Delicate nose with accents of pink grapefruit. There are also dominant odors of limestone and blackcurrant buds. Citrus flavors with minerality.

Production notes

Very well exposed, the vines are located on different stony and sloping clay-limestone hillsides mainly in Saint Bris le Vineux. This appellation was decreed on January 10, 2003 to replace the former appellation then known as "Sauvignon de Saint-Bris". Family estate held from father to son since 1577. The vines are mulched (covered with a carpet of plants more or less thick, more or less sophisticated) entirely to avoid the flow of soil, water evaporation, weeds ... Vinification in stainless steel tanks with temperature control. Maturation in stainless steel tanks as well.

Tasting notes

Robe of light straw yellow hue. Delicate nose with accents of pink grapefruit. There are also dominant odors of limestone and blackcurrant buds. This dry white wine has a lively acidity. Faithful to the aromas perceived at the olfaction, it asserts itself by citrus flavors through which a minerality of soil accentuates the freshness. It reveals an ample mouthfeel that precedes a sustained finish.
