Manual harvesting. Direct and delicate pressing. 100% of the juice is vinified in stainless steel tanks with a strict control of the fermentation temperature. After having stayed on its fine lees since the end of its fermentation. The nose is finely aromatic, with notes of freshly cut grass and peach syrup. The palate is round, fresh, invigorating, and a welcome touch of greenness. The finish is dynamic, very aromatic and long.

Production notes

Manual harvesting with rapid delivery to the cellar to avoid any trace of oxidation. Direct and delicate pressing to avoid crushing the pips and for a better quality of extraction. 100% of the juice is vinified in stainless steel tanks with strict control of the fermentation temperature. After having stayed on its fine lees since the end of its fermentation, the wine will be bottled in March of the following year with the fermentation gases to accentuate its freshness.

Tasting notes

The color is pale yellow, brilliant. The nose is finely aromatic, with notes of freshly cut grass and peach syrup. The mouth is round, fresh, tonic, with a nice tension brought by the carbonic gas voluntarily left, and a small touch of greenness welcome. The finish is dynamic, very aromatic, without any sweetness, with a good persistence.
