Product notes

Manual harvesting and delicate pressing to break the skins and release the first juices. The second pressing is done naturally by the weight of the grapes on top of each other. The temperature of fermentation is controlled between 18 and 21 °C to extract only the noble parts of the grapes. Period of 4 months on its fine lees. Mineral and ripe white fruit notes. Scents of "golden" apple, hawthorn. Mineral finish.

Production notes

The grapes are harvested by hand and gently pressed to break the skins and release the first juices. The second pressing is done naturally by the weight of the grapes on top of each other. The temperature of fermentation is controlled between 18 and 21 °C to extract only the noble parts of the grapes. After fermentation, the wine will remain for a period of 4 months on its fine lees, a period which will be beneficial to enrich it with organic matter which will give it a richer texture, but also more complex aromas.

Tasting notes

With its elegant and refined expression, the nose of this wine from the mountains of Northern Italy first reveals mineral and ripe white fruit notes. We find the scent of the "golden" apple, a delicately honeyed apple, but also the perfume of hawthorn, a honeyed flower distinguished by its aniseed note. The palate is straightforward and straightforward from the outset with its lively freshness, but is quickly enveloped by a melted and velvety texture. The finish is mineral, somewhat saline for the discerning palate and revealing of the notes perceived in the olfaction.
