Production notes

VINE CULTIVATION The chosen grass cover and homemade compost preserve these emblematic plots of old vines, overlooking Moulin-à-Vent on steep slopes. The soil work, intensive, carried out exclusively by hand and with a winch, naturally limits yields. HARVEST Mostly manual in small 13 kg crates. Careful sorting of each bunch on a table. WINEMAKING Plot-by-plot vinification in vats. Cold maceration with whole and partially destemmed bunches, without the addition of sulfur. Long fermentation (15 to 20 days) promoting a delicate extraction of aromas and expression of the terroir. Gentle traditional punching down, done by foot. AGING In well-used Burgundian oak barrels (3 to 5 wines) for 12–14 months, then bottle aging to refine this silky and delicate texture.

Tasting notes

TASTING NOTES Color: Deep garnet with purple and violet hues. Nose: Complex, intense, and elegant, dominated by aromas of candied black cherries. Palate: Beautiful structure, combining minerality with fine, creamy tannins. FOOD & WINE PAIRINGS Herb-crusted lamb chops, thick veal chop accompanied by a rich jus, aged beef, farm pork or roasted woodcock. Caramelized pear puff pastry with Stilton, Guanaja chocolate opera, red fruit fricassee. SERVING TEMPERATURE Enjoy this vintage at 16°C. AGING POTENTIAL A vintage suitable for aging, peaking at 3-5 years, then favorable evolution over 10 to 12 years depending on storage conditions.
