Product notes

Slow and gentle pressing, fermentation in tuns and 450 L barrels at controlled temperature. In barrels of 350 L and 228 L for 10 months (20% new barrels) then 5 months of maturation in stainless steel tanks. Its spicy, floral and mineral notes predestine it to be served with grilled fish or fish in sauce, cooked seafood, Asian cuisine and hard cheeses. The Mercurey white is also appreciated as an aperitif.

In the heart of the Côte Chalonnaise (12 kilometers from Chalon-sur-Saône), Mercurey is one of the most important wine appellations in Burgundy. Protected from the humid winds by its hillsides reminiscent of the aptly named Val d'Or, the vineyard also extends over the village of Saint-Martin-sous-Montaigu.

Tasting notes

Its spicy, floral and mineral notes predestine it to pair with grilled fish or fish in sauce, cooked seafood, Asian cuisine and hard cheeses. The white Mercurey is also appreciated as an aperitif.
