Product notes

After pressing and racking, the clear juices are transferred to their vinification vat; the fermentation starts naturally. Temperatures below 20 ° C. The fermentation will last between 3 and 4 weeks. The wine will rest on its lees for 59 months before bottling. Dry, confidential, generous and powerful. Notes of candied lemon then releases, after aeration, scents of star anise, salted butter caramel and honeysuckle.

Production notes

The juices flow into the reception tank and stay there for 48 hours; then the must is drawn off, leaving at the bottom of the tank the "bourbe" (deposit of pulp, which we can filter to obtain a juice of excellent quality). The clear juices are transferred to their vinification vat; the fermentation starts naturally. In order to preserve the aromas, we control the temperatures below 20 ° C. The fermentation will last between 3 and 4 weeks. The wine will rest on its lees for 59 months before bottling.

Tasting notes

Dry, confidential, generous and powerful. Beautiful luminous pale gold color. It opens with notes of candied lemon then releases, after aeration, scents of star anise, salted butter caramel and honeysuckle. The mouth is both tonic and generous, fresh and greedy on a harmonious and complex whole. The mineral finish shows a wine with a strong personality.
