"While traveling through the vineyards of Cahors, I discovered two large geological terroir zones with very distinct landscapes," says Hervé JOYAUX, the new owner of Vignobles Saint Didier Parnac, with his wife Diane and their partners. One of these areas is on the heights, between 250 and 350 meters of altitude. It is the limestone terroir of the causse, formed by a sea that was there 150 million years ago, and which still testifies today to the "pterosaur beach", located in Crayssac, just at the top of the cliff overlooking the Château Saint-Didier de Parnac. The other area is in the valley. It is a terroir of "terraces" created by the Lot, a river that for 15 million years has been digging into the causse and depositing alluvium along its many meanders. By becoming owners of Vignobles Saint-Didier Parnac, Hervé, Diane and their associates have chosen to use all types of terroirs to produce all possible styles of wines, from the most gourmet to the most complex: Château Saint-Didier de Parnac is located in the valley, Prieuré de Cénac on the causse and Château de Grézels is located in the valley and on the causse. As for the Latis brand, its terroirs are multiple and spread over the whole appellation.
