Production notes

VINE GROWING Northeast exposure on a slight hillside. Grass cover has been chosen for this single plot. HARVEST Mechanical harvest at dawn to preserve the freshness of the berries. WINEMAKING Direct pressing. Natural settling between 12°C and 14°C in stainless steel tanks. Long fermentation of 2 months at 16°C on fine lees with native yeasts in an egg-shaped concrete tank, without adding sulfur during winemaking. AGEING Ageing on fine lees in a concrete egg for 6 months before racking for bottling.

TASTING NOTES Color: Beautiful pale gold color. Nose: Very fresh and lively nose on yellow-fleshed fruits (peach) and white flowers (acacia) Palate: Beautiful tension, aromatic freshness of yellow peaches, white flowers for a chiseled Chardonnay FOOD & WINE PAIRINGS Aperitif: Oysters, seared scallops, gilthead bream ceviche, olive cake… SERVING TEMPERATURE Enjoy this cuvée around 10°C. AGING POTENTIAL To be consumed in its youth (3 years) with favorable evolution between 5 and 6 years.
