Production notes

VINE GROWING Vines of approximately 30 years certified organic since 2020. HARVEST Hand-picked in small 13 kg crates. WINEMAKING Cold maceration of whole clusters at 10°C after 24 hours in a cold room. 12 days of carbonic maceration and fermentation with native yeasts. Slightly elevated pressing, followed by completion of fermentation and aging in amphora. AGING 100% in amphora for one and a half months.

Tasting notes

TASTING NOTES Appearance: Light red, bright with beautiful highlights. Nose: Very fresh and lively, offering aromas of red cherries at first nose, followed by floral notes in the second nose. Palate: Fresh and indulgent with notes of slightly tangy red fruits and a beautiful length on the palate. FOOD & WINE PAIRINGS Aperitif, tapas, octopus, Asian dishes (tataki, sushi, pad thai…). SERVING TEMPERATURE Enjoy this cuvée between 11 and 12°C. AGEING POTENTIAL Best enjoyed young, but this wine could reveal beautiful surprises over the next three years.
