About this winery

Pavlidis Estate is situated in the region of Drama, in northern Greece, in a narrow valley on the footslopes of Mount Falakro, in proximity to the winter sports resort of Falakro. It was founded by Christoforos Pavlidis in 1998 after a long search for suitable sites for quality grape growing.

Product notes

Harvesting at night for the aromas. The grapes are destemmed and undergo a delicate crushing, followed by a cold pre-fermentation. Then comes a long pressing and a fermentation at a stable temperature of 18 °C in stainless steel tanks. Aged on lees for 2 months. Nose of exotic fruits and citrus fruits, followed by a beautiful minerality and a delicate note of white pepper. Balanced and rich with a pleasant freshness. Clean and fruity finish.

Production notes

Perfect maturity of the grapes during the harvest. The grapes are picked at night to preserve their natural acidity and aromas. Then, the grapes are destemmed and undergo a delicate crushing, followed by a cold pre-fermentation. Then comes a long pressing and a fermentation which is carried out at a stable temperature of 18°C in stainless steel tanks. An ageing on lees of 2 months gives the wine its roundness.

Tasting notes

Pale yellow color with yellow-green reflections. Complex nose with exotic fruit and citrus aromas, followed by a beautiful minerality and a delicate note of white pepper. It is well balanced and rich in the mouth with a pleasant freshness. The clean and fruity finish ends with the typical freshness of Assyrtiko, giving it its marked character.
