Product notes

Hand picked, in whole bunches. 100% destemmed harvest. Direct pressing. Only the heart of the press is retained. In vats, we carry out a cold settling (temperature 12°). Fermentation takes place in stainless steel tanks. Aging on fine lees. The nose : notes of honeysuckle and iris, fennel and white peach. The palate : full and sustained by a subtle maturation under wood. Notes of fresh nuts with honey and elderflower aromas.

Production notes

The harvest is manual, in whole bunches, with small crates of 16 kg maximum. Cooler hours are preferred to pick up these exceptional parcels. Upon arrival at the winery, the grapes are poured into a vibrating cone to preserve the integrity of the berries. The bunches then go through a de-stemmer (100% de-stemmed harvest). Then follows a direct pressing in a pneumatic press with closed cage with an axial filling by gravity. We only retain the heart of the press up to 0.6 bars of pressure. In vats, we carry out a cold settling (temperature 12°) to retain only the fine lees. Yeasting is carried out in LSAS and fermentation takes place in thermo-regulated stainless steel tanks (14-18°C). We proceed to macro-oxygenation during the whole fermentation. We preserve the natural malic acid by blocking the malolactic fermentation. We stir the lees before racking and ageing on fine lees. The blend is then aged for 30% in new barrels from three coopers, chosen for their unique aromatic typicity, for 9 months. The remaining 70% is aged in stainless steel tanks.

Tasting notes

Golden reflections come to dress the beautiful pale yellow dress of this vintage. The nose is typical of Roussanne, with notes of honeysuckle and iris, and the white Grenache brings notes of fennel and white peach. On tasting, the richness and complexity of the aromas are immediate. The palate is ample and sustained by a subtle maturation under wood. It reveals notes of fresh nuts with an elegant finish of honey and elderflower.
