Product notes

Classic vinification in stainless steel vats under temperature control (17-19 °C) for a period of 10 to 20 days. Aging in vats for a few weeks. The components of the wine must be perfectly amalgamated before bottling. 50% undergoes malolactic and 50% does not. The nose is exotic with honeydew melon and golden apple, yellow fruit, beeswax and apple flavors.

Production notes

Pelee Island is home to one of the largest concentrations of endangered organisms in Canada. Appropriately, three species of anurans including Cricket's frog, Blanchard's cricket and Fowler's toad, all of which have long since disappeared from the island, appear to be returning after biologists were able to record their typical croaking sounds. At 223 hectares, Pelee Island Winery's vineyards comprise the largest private estate in Canada. Controlling our grape supply allows us to grow and care for each vineyard in accordance with the guidelines of the World Wild Life Fund's Sustainable Vineyard Practice. In short, this translates into limited and controlled use of pesticide sprays and the use of 100% island grown fertilizer - sorghum grass. Classic vinification in stainless steel tanks under temperature control (17-19 °C) for a period of 10 to 20 days. Aging in vats also for a period of several weeks, depending on the aromatic profile and structure. The components of the wine must be perfectly blended before bottling. 50% undergoes malolactic fermentation and 50% does not.

Tasting notes

Brilliant color with green reflections. The nose is at the same time exotic with melliferous scents similar to the perfume of honeydew melon and Golden apple. The mouth is nervous, balanced by an integrated sweetness, delicate and tender. One finds aromas of yellow fruits, beeswax and apple.
