About this winery

The Domaine de la Cotelleraie is located in the heart of the vineyard of St Nicolas de Bourgueil. Gérald Vallée manages the estate and strives to bring out the character of the terroir and the typicality of the Cabernet Franc from his vines.

Product notes

Vinification in wooden vats. Pigeage twice a day for about ten days. Maceration lasts 1 month) and often natural malolactic fermentation. Stay in barrels for one year. Very beautiful Saint Nicolas De Bourgueil, bright and intense with notes of ripe fruits: the attack in mouth develops on a tannic structure, velvety and silky, with a rich and concentrated final.

Production notes

The grapes are harvested by hand and then sorted grain by grain at optimum maturity. The vinification is carried out in the traditional way in wooden vats after de-stemming. Pigeage at the foot twice a day for about ten days. Macerations are long (about a month) and often the malolactic fermentation is started under the marc. The alcoholic fermentation starts naturally one day after the vatting. The wines are then placed in barrels. They will stay there for one year. Afterwards, they are racked and bottled without filtration or fining.
